Wine Soothes the Soul and Spirit
A refreshing white wine is a singular pleasure when a cool, sophisticated quaff is desired. Astronomer Galileo said: "Wine is sunlight, held together by water." His words are as appealing as a glass of white wine.
"White" wine varieties, with flavors from tart to sweet, glimmer in pale yellows, deep golds and strawlike hues. Juice is squeezed from the pulp of green, yellowish or golden grapes immediately after picking, and the skins are removed before fermentation begins.
White wines are best served chilled, at 45-55 degrees F. in a slender flute-style glass that feels cool buy not icy cold. To chill a bottle of white wine quickly, place it in a bucket together with ice and kosher salt.
